Mead has long been associated with royalty, from the court of King Arthur to that of Elizabeth I, who liked her favourite tipple infused with rosemary, sweet briar, bay leaves and thyme. A well balanced mead, very full in flavour; lovely over ice or mulled with spices, or orange and ginger; goes well with Cheddar cheese and is a great accompaniment to desserts; try adding apple juice and lemon in the summer.
